Among the superfood phenomenon is salmon. Some people might be scared that salmon is contaminated, but eaten up to 2 or 3 times a week, the pro’s outweigh the con’s. This type of fish yields a high level of omega 3 fatty acids which your body needs…but can’t produce on its own. Omega 3’s promote healthy joints and skin, and reduce the risk of heart disease. High in protein, salmon is ideal for athletes to consume after a workout to help maintain and grow muscle mass. Protein also helps to maintain a faster metabolism desired by those who want to lose weight. Salmon is low in fat and calories, and a great source of Vitamin D, Vitamins B2 and B12, which have a positive effect on healthy bones and teeth.

It’s healthy, delicious, and versatile. Give this a try, and you’ll be back for more!

Serves 4 | Prep Time 20 Minutes

Ingredients

1 tsp vegetable oil
3/4 cup sliced almonds
1 tsp curry powder
1/4 cup low-fat plain yogurt
Dash of salt
Dash of black pepper
8 slices bread
8 oz smoked salmon (thinly sliced)
4 radishes (sliced 1/4 inch thick)
1 Granny Smith apple, quartered, cored, and sliced 1/4-inch thick

Directions

Pour the oil into a medium-sized skillet set over medium heat. When warm, add the almonds and cook, tossing occasionally, until they turn golden, about three minutes. Add the curry powder, stir well, and cook until very fragrant, about one minute. Transfer mixture to a bowl and let cool for a few minutes. Then stir in the yogurt, and season with salt and pepper to taste.

Spread the almond mixture on four slices of bread. Top each with two ounces of smoked salmon, a quarter of the radish slices, a quarter of the apple slices, and another slice of bread. Serve.

Pro tip: swap out the vegetable oil for extra virgin olive oil!

Can you say “tasty toasted tuna to go” five times fast? No? Well, instead you can say, “I’m going to make a balsamic tuna salad sandwich for lunch”.

Here’s why: tuna is incredibly dense with nutrients. It’s packed with protein, which makes it a great choice for a post-workout meal. It’s got a high concentration of omega-3 fatty acids that are anti-inflammatory, lower blood pressure and cholesterol, and improve eye health. Tuna protects against many cancers, especially those in the ovaries, pancreas, and the entire digestive track. Since tuna is filled with potassium, iron, and iodine, it helps improve blood flow and decreases stress. This helps to lessen cognitive decline and reduce your risk of alzheimers. You won’t want to forget how great tuna tastes! Tuna also helps detoxify the liver, which in turn gets rid of your body’s toxins. I’ve said a lot of great things about tuna, but in fact, I may have missed a few of its health benefits, which means that it would be an excellent ingredient to add to your diet.

Try it for lunch!
