Recipe: Smoked Salmon Sandwich with Curried Almonds

Among the superfood phenomenon is salmon. Some people might be scared that salmon is contaminated, but eaten up to 2 or 3 times a week, the pro’s outweigh the con’s. This type of fish yields a high level of omega 3 fatty acids which your body needs…but can’t produce on its own. Omega 3’s promote healthy joints and skin, and reduce the risk of heart disease. High in protein, salmon is ideal for athletes to consume after a workout to help maintain and grow muscle mass. Protein also helps to maintain a faster metabolism desired by those who want to lose weight. Salmon is low in fat and calories, and a great source of Vitamin D, Vitamins B2 and B12, which have a positive effect on healthy bones and teeth.

Serves 4 | Prep Time 20 Minutes

Ingredients

1 tsp vegetable oil
3/4 cup sliced almonds
1 tsp curry powder
1/4 cup low-fat plain yogurt
Dash of salt
Dash of black pepper
8 slices bread
8 oz smoked salmon (thinly sliced)
4 radishes (sliced 1/4 inch thick)
1 Granny Smith apple, quartered, cored, and sliced 1/4-inch thick

Directions

  1. Pour the oil into a medium-sized skillet set over medium heat. When warm, add the almonds and cook, tossing occasionally, until they turn golden, about three minutes. Add the curry powder, stir well, and cook until very fragrant, about one minute. Transfer mixture to a bowl and let cool for a few minutes. Then stir in the yogurt, and season with salt and pepper to taste.

  2. Spread the almond mixture on four slices of bread. Top each with two ounces of smoked salmon, a quarter of the radish slices, a quarter of the apple slices, and another slice of bread. Serve.

Pro tip: swap out the vegetable oil for extra virgin olive oil!
